It has already been said that the CANK looks like a “crashed spaceship” and “a bit like a diamond due to its shape”. The striking concrete block in Karl-Marx-Straße, once home to a C&A, has been temporarily transformed into an unusual event space. The Scholz & Friends Christmas party 2024 took place in this rather rough ambience, which hovers between past and future with its charm.
For the 250 guests, we designed a family-style Christmas dinner that focused on festivity and community. We started with finger food - a journey through surprising flavors: shortcrust tartelettes with plucked barbary duck, refined with plum emulsion and olive oil pearls; tartare of roasted wild mushrooms on mushroom emulsion, garnished with olive oil caviar and fleur de sel; crunchy broccoli sprouts with parsley beurre blanc and malt crumble. Everything was presented on basalt plates in flying service and brought to the guests.
As with a festive meal at home, the dishes were then placed on the table in bowls, tureens and on platters at the family style dinner - perfect for serving yourself. We served romaine lettuce with braised butternut squash, amaranth and seed oil dressing as well as a warm pumpkin soup, refined with coconut spuma, croutons and pumpkin seeds.
The main course was a tribute to the Christmas season: leg of Christmas duck, accompanied by cassis red cabbage, kale, golden brown dumplings with nut butter crunch and an intense duck jus. The vegan alternative: roasted portobello mushroom with marinated black cabbage, oxidized walnuts and truffle mash - just as festive as the classic version.
The finale: a vegan “snowball” made from coconut mousse, combined with pickled cinnamon plums and crispy coconut macaroon crumbles.
