Fire, smoke, intense flavors - at the closing evening of the ZEISS Quality Innovation Summit 2024 at Kraftwerk Rummelsburg, food was staged.
Whole legs of beef sizzled over open embers on the Ofyr BBQ, while pepper fried tofu sizzled alongside. Berlin Beef Brisket Surf & Turf, unagi carrot and plant-based meat - strong, smoky, to the point.v This variety was reflected at the food stations: Berlin Beets with kaffir lime, creamy Pasta Norcina with pecorino and truffle, juicy Berlin Bulette with potato and cucumber salad and tender braised beef “El Ninjo” with chili crisp and fragrant rice. Each dish is precisely composed, every detail deliberately chosen - sustainably and with respect for the entire product, in line with the nose-to-tail philosophy, in which the whole animal is processed.
The dessert? A spectacle. Burning Alaska - flambéed pineapple with coconut sorbet made flames dance across the plates, while the Nitro Snowball with cinnamon plum and coconut provided ice-cold perfection.
And because no Berlin evening ends without a midnight snack, we finished with currywurst with crispy potato chips - classic or vegan tofu sausage.
