The AMES Summit 2025 at SAGE Berlin brought together people who want to rethink nature conservation. Around 200 guests exchanged ideas, listened to each other, and developed joint approaches. The focus was on how to safeguard biodiversity without failing due to structural or financial constraints. The evening clearly demonstrated how powerful the energy of a community can be when responsibility is shared.

 

Berlin Cuisine had the pleasure of providing the culinary accompaniment to this special moment. Our finger food in flying service opened the evening with fine accents such as our baked artichoke hearts with chickpea cream and salted lemon gremolata or roasted sunflower root with sunflower seed cream and spicy garden herb emulsion. This was followed by our Contemporary Fine BBQ. The beef rib was carved live on the grill, the free-range chicken with savoy cabbage impressed with its juicy depth, while the pointed cabbage with chives added a fresh accent. Salads made from heirloom tomato varieties and passion fruit rounded off the picture. For dessert, we served grilled pineapple with passion fruit spice reduction and creamy coconut ice cream, as well as our special Berliner Luft espuma with raspberry and meringue.

 

It was a reception that combined enjoyment and dialogue. An evening that showed that good food can spark conversation and convey a message.
